Cool, wild fermentation with occasional lees stirring and partial malolactic fermentation build complexity and texture. Maturation for nine months before bottling in early December.
FOOD PAIRING
Roast chicken with lemon, rosemary, garlic and Kepler potatoes
VINTAGE NOTES
A dry growing season throughout the Great Southern resulted in significantly lower yields across all varieties. However, the warm conditions and continued low rainfall throughout the ripening period created very low disease pressure. One of the earliest vintages on record was produced small bunches of high-quality fruit with concentrated flavours and intensity.
